Earlier this week we received a comment from Sam & Stephanie who wanted to meet up. We didn’t know anything about them, but their comment was very flattering and since we had Curtie & Luka as protection, we invited them over for happy hour.
Sam and Stephanie arrived bearing gifts and the conversation was non-stop for about 4 hours. They have a blog, they’re full-time in a 2011 Airstream Serenity and have recently been pretending to be old enough to camp at a 55+ RV Park (which actually sounds like a a lot of fun).
Dinner Last Night:
It’s been decades since I last had sloppy joes, so when I found this recipe for Loaded Vegetarian Lentil Sloppy Joes it sounded like a fun idea. I skipped the caramelized onions just because I was feeling lazy, but otherwise served it exactly as pictured (sweet potato chips and pickles). It was sooo good and I wish it’s what we served our company the night before.
