We started with chips and homemade salsa from the Great Vegan Bean Book, and for dinner we had the very easy and delicious Coconut, Black Bean & Corn Soup along with some extra roasted baby broccoli from the one of my New Year's Eve Apps. Tonight we're having: Mustard roasted broccoli pâté with leeks + lemon and Mediterranean Nachos with Roasted Bell Pepper Hummus & Tofu Feta. The kitchen wasn't as peaceful looking as that roasted bell pepper pictured above. Happy New Year to you!

Appreciate the vegan recipe recommendations – I’m staring at The Great Vegan Bean Cookbook across our dining room table now.

You should get Isa Does It – it’s probably the most reliably-good cookbook we own (and we probably have 100.) Lots of new weekly favorites there.

Don’t feel too bad about the new water tank – our 2007 Safari SE 23′ got a new one this year too.

I love Isa Chandra and the Post Punk Kitchen website. I probably should get her cookbook. Happy New Year to you too, maybe we’ll see you on the road.

I would never leave the kitchen that way! I cleaned most of it before we ate dinner and Brian cleaned the rest after dinner. Happy new year to you, Ray and the furry ones. xo
