When you’re camping near friends, the end of the work day means means it’s time to socialize.

In addition to The Watsons and MaliMish, we’ve been hanging out with Dominic and Shannon who are traveling with their daughters Elli and Charlotte in a 5th Wheel. Dominic and Shannon own a seasonal restaurant in Alaska and are spending the winter in the south west.

While we were sitting around the fire, a man walked up with binoculars and pointed out Jupiter. He explained that three of Jupiter’s moons were visible (in the 7 o’clock position to the planet). While we passed around the binoculars, he said he was in the RV that has the saw-horses in the road.

I said “You must not want any visitors!”

He replied, “Actually, 3 RV’s tried going down that road and couldn’t turn around. They ended up having to drive off of the road crushing plants and leaving some deep tracks.”

Well, I guess his barricades make sense, though I’m still not a fan of the bright yellow caution tape.

Dinner Last Night:
Vegan Risotto and steamed snap peas. For the risotto, I slightly modified the directions on the package:

1/2 onions sautéed in Earth Balance for a couple minutes
add 1 C risotto sautée for a couple minutes
3 C of veggie broth (stir in 1 C at a time until absorbed)
When it’s ready, stir in 1/8 C of Nutritional Yeast

It was really good and got lots of praise from Brian.
