Brian captured this magic moment of me in my doo-rag yesterday while we were on the Palm Canyon hike at Kofa National Wildlife Refuge. I was trying to explain to him that the rocks were a flattering skin tone.
Again, we didn’t see any animals, but we did find some AWESOME boondocking there. Full cell and beautiful landscape, though it is a bit farther away from town (not that there’s much in Quartzsite). Unfortunately, I just have this goony picture to show for it.
Dinner last night
Boring. Spaghetti with red sauce and the last of our lettuce for salad.
Yesterday I took inventory of our pantry. I’ve put an X next to the items I’ve got plans for.

With that list I then reviewed the clean 15 list, and came up with only 2 meals. Salmon tacos and black bean soup. So we went to the local store in Quartzsite and bought 2 onions, corn tortillas, avocado, cabbage and lime.
Once I ‘X’ out the items I’m using for those 2 meals, you can see why I’m at a loss for what to make. For lunch we’re going to have cheese quesadillas, and for breakfast I have enough rolled oats to get us through the week.
Brian is going to drive to Parker, AZ tomorrow to pick up Curtie’s dog food from the UPS store there. Hopefully he can get some decent produce at the Safeway there.
Does anyone have any menu ideas?

Depending on what Brian can find for produce you could try this Soba Noodle dish I made last week. You’ll need kale & Brussels sprouts.

Then with the leftover kale, and if you can find oranges, you could make this quiona salad with chick peas that I made yesterday! (I roasted the chickpeas with a tiny bit of maple syrup before adding them to the salad)

That sounds great, though would require organic kale…I read an article recently that made me serious about organic greens. I’ll save it for when we get back to civilization.

As for something to whip up – you can do a pasta with snow peas in it, I’m assuming you have some olive oil & some dried thyme, right? If you have lemon pepper (or real lemons) use that to flavor it as well. It would taste great with a little parmesean or feta cheese, but since you don’t have that you can skip it & maybe throw a little bit of breadcrumbs on the top. Too bad you don’t have curry paste (you should see if Brian can pick that up,) and maybe some bell peppers & cilantro (if they’re organic,) and you can make vegetarian coconut curry noodles!
Can you come over and cook that for me?! Sounds delicious.
