Restful Weekend

We’ve been driving the last 6 weekends, so it was really nice not to pack it up and tow somewhere this past weekend.

We had a full day yesterday starting with laundry at the only laundromat in Quartzsite. It was jammed packed and we were lucky enough to arrive right as 3 washers opened up. It was quite a scene a photo couldn’t capture.

There was an older guy on his laptop (I don’t think he was doing laundry, it seemed like he was there for the free wifi) having an intense conversation with a younger guy who reminded me of Matthew McConaughey. Brian overheard them discussing evolution. Apparently the older guy wasn’t buying it.

After laundry we did a few more chores. Dropped off garbage and recycling and filled up with water at the RV Pit Stop.

In the afternoon we did a few geocaches. One brought us to this interesting tree.

Dinner Last Night:
Perry’s Plate Quick Black Bean & Green Chile Soup with veggie broth instead of chicken broth and coleslaw:

- chop 1 half a head of cabbage
- 1 chopped celery stalk
- 3 chopped carrots

dressing:
- 1 T Earth Balance Mayo
- 2 T apple cider vinegar
- 1 t sugar

I love the suggestions for meals yesterday. xo
