Vegan Dinner

We usually don’t invite people over when we’re staying in an RV park, but when we’re staying in a beautiful spot we jump on the opportunity to have company.

Last night was the first time Dan and Tricia had seen the trailer. When Tricia walked in the first thing she said was “I get it!” It’s nice to be understood.

We sat outside for awhile and watched the sunset and then went in and had dinner. Tricia is a vegan so I made Vegan Potato Skins.

I really wanted to try this coconut fake bacon recipe but we didn’t have liquid smoke in the trailer. Next time.

We also had veggie sticks served with a vegan ranch dip which was the surprise hit on the menu. Adapted from Vegweb:

– 1/2 C earth balance (vegan) mayonnaise
– 1 t onion powder
– 1 t garlic powder
– 3 T red wine vinegar
– chopped parsley

Tricia and Dan brought 3 amazing vegan desserts from FreshMAMAS Freshetarian. I want to eat there.
