We’re Still Here

This has probably been my longest stretch of not blogging. I can’t say it’s due to anything exciting, it’s just that we’ve been laid up with the flu and haven’t moved in days.

It’s a good thing we’re feeling better since we plan to hitch up and move our home this weekend.

Notable Recipes This Week:
I did manage to cook a few meals this week. I made this really easy Coconut, Corn & Black Bean Soup. It’s really easy to make and has great flavor, though it might be partially due to the homemade bouillon cube from The Great Vegan Bean Book.

Last night I made Zucchini Corn Fritters with Herbed Aioli.

I wanted to try the corn fritter recipe when we were in Utah, but couldn’t find the Erewhon brand corn flakes. I checked the ingredients on their website to see if I could substitute another brand, but couldn’t find any other brands that contained just organic non-GMO milled corn and sea salt.

The Zucchini Corn Fritters were delicious and now it looks like I have to find another recipe to use the rest of the corn flakes.

    Yum, those fritters look good. I say just make them again and again until you’ve used all the corn flakes! Or perhaps try your own version by substituting grated carrots or sweet potatoes for the zucchini.

    sorry you have both had flu….did you get to a dr. to get Tamiflu soon enough? maybe you will have immunity now for several yrs.

      No, we try to avoid doctors, their offices are so germy! We’re better now thanks to rest and lots of fluids. xoxo
