Back at Buckeye

Buckeye Regional park is west of Phoenix and has free camping. We’ve been here before and figured it was a good stop for us on our way back to Vegas.

Dinner Last night:
I’m “winging it” this week without a planned menu. I had an old bunch of kale and some basil so I made Kale Pesto with shells and roasted asparagus. I looked up the roasted asparagus recipe just to get the temperature and noticed a tip for peeling the ends if they’re thick which I tried and I think may have helped.

  1. I made the Lentil Sloppy Joes the other night. It was so good! I haven’t had a sloppy joe in years and years. But this tasted exactly as I thought it should. I love that I had so much left over to freeze for later.
