Vegan Banana Bread

I know, this photo has nothing to do with this post, it’s just the skies are prettier than my banana bread photo.

Earlier this week Brian had “Banana Bread Demands,” which means he kept asking me to make banana bread. I wasn’t planning on it, so I wasn’t sure that I had all of the ingredients, though we did have the requisite very ripe bananas.

I found a recipe for Whole Wheat Oatmeal Applesauce Banana Bread and made 3 modifications.


Vegan Banana Bread

2 bananas
1/3 cup agave syrup
1/3 cup unsweetened applesauce
1 teaspoon vanilla
1 flax egg (1 T of flax in 3T of warm water)
3/4 cup coconut milk
1 1/2 cups spelt flour
1 cup rolled oats
1 1/2 teaspoons baking powder
3/4 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon cinnamon

Preheat oven to 350. Combine wet ingredients. Combine dry ingredients. Combine all. Pour into a bread pan coated in cooking spray. Bake for an hour.

    • Hi Chris, we plan to head East in September 2014. We’re planning on Florida for next winter and then up the coast to Maine in the spring of 15.

  4. thought you were due in the Keys this January….whenever you are around, hope to see you….Midcoast Maine around Camden, where we have spent about a year is a good area, too….and yesterday we found your excellent Happy New Year photo in the mail….all of you looking better every year!!

    • We had to put it off a year because we couldn’t get reservations at the state parks in the Keys. We’re on a mission to make it there next winter. xoxo
