When we were camping at Sam’s Family Spa we saw the Hello Kitty Airstream. In 2004, Sanrio commissioned Airstream to build a custom Kitty trailer. It was kind of hard to photograph because it was located in the shade and it’s campsite was a little tight.
Betty, the current owner let us see inside.

Dinner Last Night:
Black Bean Spinach Enchiladas. Excellent recipe!! The only thing I did differently was that I didn’t wilt the spinach. We’re boondocking, so the less pans I use the better and I figured the spinach would wilt in the oven anyway. Everything about this was so good.

Thanks so much for the enchilada recipe! I really needed a new quick dinner. Today will be night 26 of cooking in! Being so far from decent places to eat, I have been cooking. Really, I get so disappointed with food at restaurants that I would rather eat at home. But 26 days in a row is making my creativity falter. Also, getting home from a long day of hiking leaves little energy for big messes. This is perfect and I have everything!!
The “Kitty” Airstream is a little over the top!
