Down the road from us are some adorable baby alpacas. We finally drove by when the lighting wasn’t terrible.
This guy came right up to the fence to greet me. I love those teeth.
Dinner Last Night:
Raw Green Galore Kale soup. If you aren’t into kale, the name might turn you off. If it were my recipe I would have called it Guacamole Soup.
I kind of screwed up the Ginger Cream. I used almonds instead of pine nuts and after I soaked them forgot that I was planning to split the recipe in half. So I skipped the cream, but had extra balsamic reduction to drizzle on top which was really good. I served it with chips and salsa. No side salad necessary.
Warning: Even though the recipe only called for 1 garlic clove, a few hours later we had some seriously bad garlic breath.

If it was too thick you can add more water – but I’m sure you saw that in the recipe. Glad you liked it!
Sounds wonderful as a meal type dip if you made it on the thicker side.
It’s pretty thick as it is (the author of the recipe suggests adding more water to thin) though if you omit 1 or 2 C of the water, you’d probably have a really good dip on your hands!
