We were excited to have Tim and Amanda join us at Lake Mead this weekend, a week earlier than expected. So yesterday, we all went on an easy hike to the Anniversary Narrows.
I learned about the name after the hike, and realized this morning that the name is kind of fitting considering that we met the Watsons a year ago this month.
Oh and by the way – some may have noticed I’ve been messing with the template for this blog, hoping to implement a responsive design (good for phones). I had to switch it back this morning because tags weren’t working. Oh well. I like the spacing on this version better anyway.
Dinner Last Night:
Dinner wasn’t great, so I won’t link to the recipe. I made pumpkin gnocchi with a sage “butter” sauce. The gnocchi was made out of chickpea flour rather than potatoes and tasted a little like cardboard. We ended up drenching it in tomato sauce to make it a bit more edible.
With the left-over pumpkin puree I made Pumpkin Pie Banana Chunk Oatmeal Cookies for breakfast, which were quite tasty.
