Bottoms Up!

Wednesday night we brought the Mushroom Hot Pot dinner over to our friends Bert and Janie in Borrego Springs. I think it’s a good sign when the person you’re feeding has seconds and slurps the last drops of soup out of his bowl.

Dinner Last Night:
Cashew Corn Chowder with Cilantro Cream. Fortunately, this is not what we brought it B&J’s place. I didn’t really care for this recipe, though Brian liked it. It could have been blended a lot more, but I tend to conserve power and not run the blender too long when we’re boondocking. We had roasted asparagus on the side which was delicious.
