Cactus Flowers

I’m glad we got to see some cactus flowers before leaving the desert. Earlier this week I made Brian pull the truck over so I could take this photo. I scrambled up a hill in the wrong shoes and definitely regretted it on the way back down as I fell and scraped up my leg.

Dinner Last Night:
I haven’t been sticking to my menu at all this week. So last night we wanted to eat with our neighbors, but everything I had planned was going to take too long, so I threw together rice noodles, broccoli and zucchini topped with peanuts and this sauce:

Peanut Noodle Sauce:
1/2 c. light coconut milk
1/2 c. fire-roasted or stewed tomatoes
1/4 c. peanut butter
3 T. sodium soy sauce
juice of 1 lime
2 t. minced ginger
1 t. minced garlic
1 T. maple syrup
sriracha to taste

Combine coconut milk, tomatoes, peanut butter, soy sauce, lime juice, ginger, garlic, maple syrup and sriracha, in a blender until smooth.

It’s quick, easy and tasty. Happy Friday!

    I have a lifetime supply of sriracha sauce after freaking out about the plans to shut down the plant. bought a case, 9 bottles, of amazon. will not run out anytime soon. let men know you need some……xx

    worth it for this photo…hey, Leigh….I was just thinking about that complicated sweater you were knitting…did you finish that one? show us….don’t ask why cactus flowers brought up the sweater?

      It was a blanket! I totally dropped the ball with it. I do much better with knit groups where I can sit and socialize at the same time as knitting.
