Desert Flowers

There are flowers all over the desert this time of year.

Dinner Last Night:
I was going to make this Vegan Pasta e Fagioli Soup recipe, but realized that I accidentally bought canned navy beans so I had to improvise. The recipe called for water to make the stock but I was worried it would be too bland so I used veggie broth as well. I also added butter and nutritional yeast to give it some flavor.

2 14oz cans navy beans
1 T olive oil
1 large onion
2 celery stalks
2 minced garlic cloves
6 oz rigatoni
2 C water
3 C veggie broth
1 14oz diced tomatoes
1 T fresh thyme
salt & pepper to taste
2 T earth balance butter
1/4 c nutritional yeast
6 oz baby spinach

Saute diced onion for 7 minutes, add celery for 3 more minutes, and then the garlic for 1 more minute. Add rigatoni, beans, water, broth, diced tomatoes and thyme. Bring to a boil and cook then simmer for 12-13 minutes (time depends on pasta). Once the pasta is cooked, add salt & pepper, butter and nutritional yeast. Taste and adjust. Throw in the spinach right before serving. Enjoy!

    Beautiful photos! Actually living in the desert, we are well aware how much color there can be at this time of the year. Here at the house, we have a portion of the property that includes a variety of cacti. All of them are in bloom or soon will be.

    On another subject, I’m asking around among bloggers…what brand and model of GPS do you use. Or is it part of your smartphone? If so, which phone? Are you happy with how the GPS aspect works?

      Hey Ed – we use google maps on our phones, though sometimes when it navigates you out of traffic it will send you down some kooky routes, so you have to keep that in mind if you use it.
