Faux Falls

We only had a small window for adventuring yesterday, so we took a quick hike to check out the falls at our campground. The man-made falls was born in 1981 from water that is sourced from Mill Creek, piped through a tunnel that dumps down this mountain creating the falls which then empties into Ken’s lake.

Dinner Last Night:
Chickpea-Amaranth-Squash Bowl with Tahini Sauce and Avocado. I still have this bag of amaranth that my aunt gave me, so when I saw this recipe I figured I should give it another try. It was so MUCH more enjoyable this time, though maybe anything with that tahini sauce would taste great. I think the author of that recipe is on to something. A grain, a bean and a veggie and that sauce…we’ll be doing this again.
