Ice Park Trail

While we’re in Mountain Time our work day ends at 5pm, which doesn’t leave us a lot of daylight for outdoor activities. So yesterday after work we went on a 2 mile hike on the Ice Park Trail.

It’s too early in the season to see any ice or ice climbing like the trail description promises, but it was still a really pretty hike that even Curtis was able to do.

Dinner Last Night:
Butternut Chili. Instead of slow cooking this, I first roasted the butternut squash in the oven (skin on 350 for 30 minutes) and then sauteed everything in the recipe listed up to the squash. Then I dumped the rest of the ingredients, heated it for about 10 minutes and turned off the heat.

When we returned from the hike I heated up the chili and served it with a spinach salad and the left over socca bread. This makes left-overs for 3 more meals, so good thing we liked it!
