Saturday in the Okanogan

Yesterday was quite a full day. It started off with some weeding, and then we went on a drive to check out some nearby campgrounds, take a 3 mile hike and scout some of the lakes in the area.

Beth Lake, pictured above is about 30 miles from our place. We actually have 4 lakes that are really close to us, one of which I think we’ll be going to today.

Dinner Last Night:
We got home around 2 and I decided to make an early dinner. I defrosted the extra red pepper cashew cream sauce from when I made tamales earlier this month and served it over whole wheat shells with a side of roasted brussels sprouts. We ended up mixing it all together. It was great.
