A Week of Casino Camping

We started out our week camping in the parking lot at Morongo Casino Resort because of the proximity to Brian’s brother’s house.

Yesterday, we moved over to Fantasy Springs Resort Casino which gets us a little bit closer to our next destination.

Fantasy Springs is quieter than Morongo, and doesn’t have the bright parking lot lights that stream through the corners of our black-out curtains.

Casino camping isn’t our favorite, but it can certainly be convenient and the price is right.

Dinner last night:
Red Quinoa and Black Bean Vegetable Salad. We had the leftovers today for lunch and Brian remarked how much he liked it and that we should always have it on hand for a quick meal. Next time I would serve it tossed with baby spinach.

    We would love too learn more on spending year long in a airstream, we are looking at a 30′ to travel with and we own a ford F250 to tow with love to learn more.

    Salad sounds good! I’ve decided that while I really enjoy quinoa, I like farro in a salad better. I guess it is the extra body and texture.
