Salida Boondocking

We learned about Bighorn Canyon from the Watsons. It covered a few requirements for us, the distance from Denver was perfect (about 3 hours) and the elevation isn’t too high. Elevation is a big concern for us right now since temps are getting below freezing at night.


Behind the Airstream there’s a little trail going down to this river.

Dinner last night:
Ultra Creamy Hemp Salad Dressing (nut-free, oil-free) + Delicata Squash Salad. This dressing is awesome and I love that it’s oil-free. We’ll be using it all week.

    Reading The China Study….watched Forks over Knives today….thinking about attempting a change…this dressing looks good….hulled hemp seeds? it will be interesting to see if I can find them here….
