We have to be in Chicago for work a week from tomorrow, so we’ve made some miles since I last posted. Our first stop was Mohegan Sun Pocono in Wilkes Barre, PA where we opted to stay in the field across from the totally un-level parking lot with all of the other RVs.
Our next stop was Woodland, PA where we stayed in an RV park rather than a state park and successfully avoided the 4th of July revelers.
We finished out the week in Ohio at West Branch State Park in Ravenna, OH. Our site was a little more private than others, though they’re all pretty nicely spaced. Many (including ours) are un-level, so we were happy that our new power jack makes it easy to nose the trailer all the way down when we need to.
I’m still undergoing treatment for a variety of gut issues and recently was given the ok to try and introduce coconut water kefir into my diet. Water kefir is rich with beneficial bacteria and I’m starting out with small amounts to avoid an adverse reaction. Pictured on the left is a batch I have in the first phase of fermentation. Pictured on the right, is the result of a second ferment where I added some lemon and blueberries and let that sit for an additional 24 hours. So far, I find the process fascinating and have a feeling there will be a lot more fermenting in my future.
