Winter Texan

Brian told me that no one wants to see another photo of our trailer, so instead, here’s a shot of the view we had this past week at Seven Oaks RV Park in Mission, TX.

There weren’t any options in the area for public campgrounds, and Mission is really dense with RV Parks, so we had to stop here so Brian could scout it for Campendium.


Many of the snow-birders here call themselves “Winter Texans,” and today I learned that if you see someone wearing a name tag with their RV park on it, it’s not that they work at the park, it’s so in case of emergency you’ll know where they live.

Dinner This Week:
The most interesting dinner we had this week was another Vegan Richa special. Cashew Stir Fry. I skipped the tofu and added broccoli and chickpeas. Really tasty.

    We are Winter Floridians this year. Probably won’t return for many years and only then to go to Avatarland when it opens at Walt Disney World.

    I love Vegan Richa’s recipes. She pretty much nails them every time.
