Quail Creek State Park

For our last week in Utah, we’re camping just north of St. George at Quail Creek State Park in Hurricane.

It’s a small park with 23 sites, all have covered picnic tables, firepits and grills.

Even though it’s been hot this week, everyone seems to want to have a campfire at night. Lucky for us the sites are pretty far apart so we haven’t been bothered by the smoke.

Thanks to Pam for recommending the nearby Farmers Market in Laverkin for groceries where I was able to pick up some good produce!

Dinner Last Night:
Millet with white beans and pesto. I didn’t really follow this recipe, I was more inspired by it. I made the millet according to the package along with a basic pesto recipe (I cut the oil by 1/3 and used walnuts instead of pine nuts). Tossed in white beans and halved grape tomatoes. Tasted great.

    Glad you enjoyed the store, Leigh. I was very surprised to find such a nice store in the middle of nowhere. We stopped when we were in Zion for a hike. It is so clean and well organized.

    We will be in Boulder City for the week you are here. Maybe we can squeeze in a hike one day if you can get away from work at all. Many of the hikes are right near where you are staying. It is very hot here right now…high 80’s!! But next week it is suppose to drop into the 70’s which will be very nice.

    Right now we are scheduled to leave on the 1st but we want to go to Death Valley and it is still quite hot there. So we may stay here longer. There is so much hiking right around this area that we can keep busy for awhile. Also, there is a Starbucks a block away that we walk to with a grocery store next door. So we are happy campers.

    Maybe we can do a dinner we evening!?
