Baked Oatmeal

We’ve had dinner out the last 2 nights, so a new breakfast recipe is all I’ve got to share. Since I don’t always have the best luck with new breakfasts, we generally stick to 2 different recipes, Overnight Oats and Breakfast Cookies.

Well, this morning I tried Baked Carrot Cake Oatmeal and it’s really really good. I used pecans instead of walnuts and the chia seed “egg.”

Obviously oats are the cornerstone to all of our breakfasts, do any of you have any tasty healthy breakfasts that don’t use oats?

      The first day it’s great, re-heated isn’t as good. I’d probably cut the recipe in half next time. xo

    My go-to’s (other than steel cut oats:
    • smoothie – almonds and flax seeds (grind first), then add water, vanilla extract, banana, dino kale, and pineapple. Very zingy way to start the day – for the taste buds, eyes and stomach.
    • frozen waffles with bananas, chopped walnuts, greek yogurt and maple syrup – can substitute a really good whole grain bread for the waffles but, alas, not as much fun as waffles!
