Peanut Noodles

Pictured above is the first dinner I cooked in our new Airstream. I got the recipe from one of the food blogs I look at and it is really one of my favorite versions of peanut noodles.

Meanwhile, I know some of you have been chomping at the bit for me to post interior shots. I’ve been procrastinating that, waiting for the perfect setting or perfect light. I’ve started a photo gallery and will continue to add to it.

Oooooh, can you tell me more about that baby blender-looking-thing? That looks like a must have! The recipe looks fantastic — in a pinch, Ive also made peanut sauce out of mango chutney in a jar and peanut butter — its not as flavorful as having all the fun stuff mixed in, but it works!

I was thinking I should mention the blender! I got it to replace our regular blender for the trailer, it comes with 2 plastic cups and we use it for our smoothies in the morning. It’s actually more powerful than our old expensive glass blender – though you have to pulse the button or the little motor gets a little smell to it like it might burn out. I love it. $20.71 on Amazon:

Awesome! Im using a hand blender which, when making smoothies, just gets me messy. I’ll definitely check it out! Thanks!

I love the photos! Looks so comfortable inside. I especially like the windows that wrap around the bed.
