Veggie Soba Noodles

With the lack of grocery options this week, I wasn’t expecting to pull off a dinner quite this good. Brian lucked upon an organic red pepper (if you don’t already know, you can look at the sku on the sticker and if it starts with a 9, it’s organic) and I seemed to have everything else to make one of my favorite soba noodle dishes.

Veggie Soba Noodles
adapted from Chicken Soba Noodles

1 tablespoon rice vinegar
2 tablespoons roasted peanut oil
2 teaspoons low-sodium soy sauce
1 teaspoon honey
1 teaspoon chili garlic sauce
1 pinch of salt
2 cups cooked soba noodles
1 cup grated carrot
1 cup chopped snow peas
1 cup chopped red pepper
1/4 cup minced red onion
4 teaspoons dry-roasted peanuts
lime wedges (optional)

Preparation: Combine ingredients!

    Love this! Definitely going to try. I bet it will be good with roasted vegetables from the grill. Yum!

      Yes! It’s my favorite soba dressing. Be sure to rinse the noodles in cold water. They can be served room temp or refrigerated.
